Florentine Manicotti

1/4 cup chopped onion
1 TBL butter or margarine
1/2 clove garlic
 
Saute until tender
 
10 oz package of frozen chopped spinach, cooked and drained
1/2 pound cottage or ricotta cheese
2 oz shredded mozeralla
1/4 cup parmasean cheeze
2 slightly beaten eggs
1 tsp lemon jiuce
1/2 tsp salt
1/8 tsp pepper
 
Combine with onions and stuff into prepared shells. Can use homemade Manicotti Shells or purchased shells.
 
Top with 2 cups spaghetti sause and sprinkle with additional mozeralla.
 
Bake at 350 for 30 - 40 min, until bubbly. Serves 4 -6. Makes about 16 shells.
